Avocado Cucumber Salad – The Girl Who Ate Everything

This healthy Avocado Cucumber Salad has a citrus dressing with cilantro and garlic.

This Avocado Cucumber Salad is a great side dish to any meal!

We’ve joined the masses in the eating healthy movement that always accompanies the New Year. So far we’ve had Spaghetti Squash spaghetti, naked burgers with grilled veggies, and Taco Stuffed Peppers.

Is it bad that I’m over it? We eat pretty dang healthy in general but I don’t mind a treat here and there. So this all or nothing approach has me wanting to rebel and dive face first into a bowl of cookie dough.

You know how they say chocolate is a mood elevator? Well, avocados do the same thing for me.

As long as I can throw some avocado on top of an omelet, toast, or in a salad…I’m happy.

This salad is light, tangy and a beautiful monochromatic dish.

1) You can either buy them green and let them ripen at home or buy them ripe at the store. Ripe avocados will be dark  in color.

2) Ripe avocados will be tender to the touch. If it’s mushy, it’s overripe. It should give a little bit to the touch but not too much. It should feel like the palm of the bottom of your hand.
