What is flank steak?
Flank steak is cut from the abdominal or lower chest are of the cow. That makes it a relatively tough cut of meat, but it’s filled with flavor (similar to skirt steak). It’s typically cut a certain way (against the grain) to make it more tender, and it often used in recipes that call for strips of steak. It’s great for fajitas, nachos, and Philly cheesesteak!

This grilled flank steak recipe is so simple. Make the cilantro lime butter (which just requires mixing some ingredients together, and then letting it sit in the refrigerator), let the steak sit on the grill for a few minutes, and then you’re done. That’s it! It’s a great summer grilling recipe that you can make any night of the week.
How long to grill flank steak
How long to grill flank steak depends on how done you want your steak (see below for more info). Grilling it for about 6 minutes on each side should cook it to rare, while cooking closer to 9-10 minutes per side will give you a well-done steak. Keep your meat thermometer by the grill; that’s the best way to know when it’s ready!
Grilled steak internal temperature
When cooking steak (or any meat), make sure you have an instant-read thermometer handy to check the internal temperature. This is the best way to make sure it’s cooked perfectly and safe to eat.
You can grill this flank steak to whatever your preferred temperature is: Rare (130-135°F), Medium (150-155°F), or Well-done (165°f). Because this cut of meat is a bit tough, well-done typically won’t give you the best results. I recommend medium-rare (140°F) for this recipe!
