There could not possibly be a more refreshing summer adult beverage than an ice cold Strawberry Mojito, made with freshly picked strawberries and homegrown mint.The first time I ever had a traditional Mojito was in south Florida with my brother. Unless you’re in Cuba, south Florida is the next best hot spot to taste an authentic Mojito.
Every summer I look forward to taking my kids strawberry picking. I make strawberry bread, strawberry shortcake, and of course we just pop them in our mouth fresh.
Last summer was the first time I grew mint. I bought a small starter plant, and grew it in a container on my deck. I had heard from more than one person how invasive mint can be … it’ll take over your garden if you try to plant it in the ground.
So after strawberry picking one day, I tried my hand at making a fresh Strawberry Mojito, and after a twist of this and a shake of that, it was perfect. The slightest bit of sweetness, a nice but not overbearing mint flavor, and just the perfect amount of rum.
It’s helpful if you have a cocktail muddler, but if not you can use a wooden spoon to muddle the ingredients in the glass.
Strawberry Mojitos Recipe
Ingredients per glass:
- 2/3 cup fresh strawberries, washed and hulled
- 5-6 mint leaves (I used spearmint)
- 2 lime wedges
- 2 tsp Superfine sugar (dissolves faster than granulated, although granulated or even agave nectar may be used)
- ice to fill glass
- 2 oz white rum
- 4 oz club soda
In a rocks glass (or I used a stemless wine glass), add strawberries, mint, lime and sugar. Muddle together until juicy. Add ice to fill the glass. Add rum and club soda, and stir to incorporate flavors.
If you don’t care to grow fresh mint in a container, you can find it in the refrigerated produce section of most grocery stores.
