Simple Chicken Breast Salad – Eat With Your Eyes

Ingredients: 1/2 teaspoon agave nectar,1/4 teaspoon black pepper,1 large carrot, shaved,1 cup cherry tomatoes,1 cooked chicken breast,1/2 teaspoon Dijon mustard,1/2 teaspoon dried tarragon,4 cups mixed greens,1/4 cup extra-virgin olive oil,1/2 teaspoon sea salt,2 teaspoons minced shallots,2 tablespoons toasted sunflower seeds,1 tablespoon tarragon vinegar
Instructions:

  1. In a blender, combine olive oil, vinegar, tarragon, mustard, shallots, agave, salt, and pepper. Blend until well combined. Taste and adjust salt, pepper and agave, if needed. In a large bowl, combine the washed greens, arugula and tomato. Scatter cooked chicken breast and carrot shavings over top of greens and tomato.
  2. Sprinkle sunflower seeds on top of everything and serve immediately.
