Ingredients: 1/2 teaspoon agave nectar,1/4 teaspoon black pepper,1 large carrot, shaved,1 cup cherry tomatoes,1 cooked chicken breast,1/2 teaspoon Dijon mustard,1/2 teaspoon dried tarragon,4 cups mixed greens,1/4 cup extra-virgin olive oil,1/2 teaspoon sea salt,2 teaspoons minced shallots,2 tablespoons toasted sunflower seeds,1 tablespoon tarragon vinegar
- In a blender, combine olive oil, vinegar, tarragon, mustard, shallots, agave, salt, and pepper. Blend until well combined. Taste and adjust salt, pepper and agave, if needed. In a large bowl, combine the washed greens, arugula and tomato. Scatter cooked chicken breast and carrot shavings over top of greens and tomato.
- Sprinkle sunflower seeds on top of everything and serve immediately.
